Twice Baked Acorn Squash with Cous Cous

Do you like twice baked potatoes? Do you like acorn squash? Then you are definitely going to love this recipe for twice baked acorn squash! It is stuffed with cous cous combined with carrots, celery, and mushrooms. Topped with mozzarella cheese and garnished with fresh parsley. Also, makes an excellent option for meatless dinners!

  1. 2 medium-sized acorn squash, cut in half and seeds/guts removed
  2. cous cous, cooked according to directions on box
  3. 1 tablespoon olive oil, for sautéing
  4. 1 carrot, diced finely
  5. 1 stalk of celery, diced finely
  6. 2 cloves garlic, minced
  7. 1/2 cup mushroom, diced finely
  8. 1 1/2 cups pasta sauce, homemade or store bought
  9. 2 teaspoons dried italian herbs
  10. salt and pepper, to taste
  11. mozzarella cheese
  12. fresh parsley, for garnish
  1. Preheat oven to 400 degrees.
  2. Place squash cut side down on a glass baking dish. Bake for about 40 minutes, or until tender.
  3. Meanwhile, cook your cous cous following directions on box and set aside.
  4. Heat a skillet over medium heat and add oil. Saute the carrots and celery until soft, 5 minutes. Add in garlic, cooking for another minute until fragrant. Throw in your mushrooms last and cook a few minutes.
  5. Next, mix in your pasta sauce and cous cous with the vegetables. At this time, season with herbs and salt and pepper to taste.
  6. When squash is finished cooking, remove from oven and let cool slightly. Once comfortable to handle, scoop out majority of the squash (like as if you are making a twice baked potato). Combine this squash with your vegetable and cous cous mixture. Spoon this back into each squash half and top with mozzarella cheese.
  7. Now, turn your oven to the Broiler setting and broil the squash until cheese is nicely browned.
  8. Remove from broiler and let cool. Garnish with fresh parsley, and enjoy!
  1. This recipe serves 2, but can very easily be doubled!
