Summer Squash and Tomato Casserole

Go down to the market this weekend and pick up some fresh squash and tomatoes and prepare this great, flavorful casserole for the family.

  1. 1 C. mozzarella
  2. 1/3 C. parmesan
  3. 1/3 C. crumbled feta
  4. 1/2 tsp. oregano
  5. 1/2 tsp. basil
  6. 2 Tbs. minced garlic
  7. 2 Tbs. onion
  8. salt and pepper
  9. 5 tomatoes
  10. 2 summer squash
  11. 1/4 C. butter
  12. 3/4 C. bread crumbs
  1. Preheat oven 375.
  2. Grease a 9x9 pan.
  3. Chop onion fine, thinly slice tomatoes and squash.
  4. Combine mozzarella, parmesan, feta, oregano, basil, and garlic.
  5. Add salt and pepper to taste.
  6. In the pan, lay down half of the sliced squash.
  7. Layer 1/4 of the cheese/herb mixture, then half of the tomatoes, another 1/4 cheese/herbs, and repeat.
  8. In a skillet, saute the onions with butter, then stir in breadcrumbs.
  9. To bake, cover with foil and put in oven for 25 minutes, then remove foil, and cook for an additional 20 minutes.
  10. Cool slightly then serve.
