Spicy Parmesan-Roasted Cauliflower

Even the picky, non-vegetable lovers will get a kick out of this cauliflower recipe. It makes a very healthy and adaptable side dish for almost any meal. The results of roasting cauliflower instead of boiling are delicious. Give it a try tonight!

  1. 1 head cauliflower, washed and chopped
  2. 2 tablespoons olive oil
  3. 4 cloves garlic, minced
  4. 3 tablespoons grated parmesan cheese
  5. 1 1/2 teaspoons dried italian herbs
  6. 1 teaspoon crushed red pepper flakes
  7. salt and pepper, to taste
  1. Preheat oven to 375 degrees.
  2. Arrange cauliflower on a 13x9in. baking sheet. Drizzle with olive oil and sprinkle with minced garlic and the parmesan cheese.
  3. Season with herbs, crushed red pepper, and salt and pepper to taste. Gently stir to mix everything together.
  4. Bake for 15 minutes, then give cauliflower a stir and sprinkle with another tablespoon or two of parmesan cheese.
  5. Put back in oven and cook for an additional 5-10 minutes, until cauliflower is lightly browned and tender.
