This pan-fried trout makes a quick and easy dinner solution for those busy week nights. Keeping the spices simple makes it a very versatile dish, so use your creativity to add it to your next meal. Would be great for fish tacos or simply served with a side of rice - the choice is up to you!

  1. 2 trout filets (about 2 pounds)
  2. 2-3 tablespoons extra virgin olive oil (enough to lightly coat fish)
  3. 2 tablespoons butter
  4. 1 1/2 teaspoons garlic powder
  5. 1 1/2 teaspoons paprika
  6. 1 1/2 teaspoons chili powder
  7. 1 teaspoon salt
  8. freshly ground black pepper, to taste
  9. fresh cilantro, for garnish (optional)
  1. Drizzle and rub olive oil over the trout filets, covering them completely.
  2. Season with salt and pepper. Combine garlic powder, paprika, and chili powder in a small dish. Spread this dry rub mixture on the fish evenly.
  3. After seasoned, let trout sit for 30 minutes at room temperature.
  4. Heat a skillet to medium high and add the butter. When butter has melted, add filets to your pan, be careful not to overcrowd them. Cook about 3 minutes until skin is nice and crisp. Then, carefully turn over filets and cook an additional 3 minutes.
  5. Once trout is cooked, transfer to a platter or wire rack and repeat cooking process until all fillets are done.
  6. Serve skin side up and garnish with fresh cilantro.
