  1. 2 cups flour, sifted
  2. 1/4 cup unsweetened cocoa powder, sifted
  3. 1 teaspoon salt
  4. 1 cup vegetable oil
  5. 1 1/2 cups sugar
  6. 2 large eggs
  7. 3 ounces red food coloring (or 1 teaspoon red gel food coloring dissolved in 6 tablespoons of water)
  8. 1 1/2 teaspoons pure vanilla extract
  9. 1 cup buttermilk
  10. 1 teaspoon baking soda
  11. 2 1/2 teaspoons white vinegar
Cream Cheese Frosting
  1. 8 ounces cream cheese
  2. 1 stick (1/2 cup) butter, room temperature
  3. 2-3 cups confectioners' sugar
  4. 1 teaspoon pure vanilla extract
  1. Preheat oven to 350 degrees. Prepare two cupcake tins by lining with paper cupcake liners and set aside.
  2. In a large mixing bowl, sift together the flour, cocoa, and salt.
  3. Beat together oil and sugar in the bowl of a stand mixer, just until combined.
  4. Add in eggs, one at a time, mixing well after each addition.
  5. Slowly pour in the red food coloring and vanilla. Mix well until incorporated.
  6. Next, add the flour mixture alternately with buttermilk. Make sure buttermilk is your final addition.
  7. Mix together the vinegar and baking soda. Add it to the batter and beat for about 10 seconds.
  8. Pour or scoop batter into prepared muffin tins. Bake 20-25 minutes, or until toothpick inserted in the center comes out clean.
  9. Cool slightly and remove cupcakes from pans. Let cool completely before frosting.
  10. To make cream cheese frosting: In stand mixer fitted with the paddle attachment, beat together the cream cheese and butter until completely smooth. Beat until light and fluffy, about 2 minutes. Gradually add in the confectioners' sugar, beating on low speed. Scrape down sides of bowl as needed and mix until incorporated. Add the 1 teaspoon vanilla extract and beat until combined.
  11. Frost and decorate cupcakes however you want. Keep it simple, or add roses and red sprinkles for Valentine's Day!
  1. Yields 24 regular sized cupcakes, filled 2/3 full.
