For Latkes
  1. 1½ cups (1/2 pound) russet potatoes, washed and peeled
  2. 1 tablespoon onion, minced
  3. ½ clove garlic, minced
  4. 1 egg
  5. 1 tablespoon flour
  6. ½ teaspoon salt
  7. ½ cup oil
For Poached Eggs
  1. 4 eggs
  2. 1 teaspoon white vinegar
  3. Lox
For Hollandaise
  1. 1 egg yolk
  2. ½ lemon, juiced
  3. Pinch cayenne pepper
  4. ½ stick unsalted butter (4 tablespoons), melted and hot
  5. Salt to taste
  6. 1 tablespoon dill, minced
