Pecan Fingers

Delicious pecan cookies made with butter, brown sugar, and powdered sugar. They are known as pecan fingers because of their shape, but are also called a number of other names as well. You can't go wrong with these cookies, especially at Christmas. Everyone will be begging you for the recipe!

  1. 1 cup butter, softened
  2. 2 tablespoons light brown sugar
  3. 1/2 cup powdered sugar
  4. 2 cups all purpose flour
  5. 1/2 teaspoon salt
  6. 2 teaspoons pure vanilla extract
  7. 1 1/2 cups pecans, chopped
  8. confectioner's sugar, for coating cookies
  1. Preheat oven to 325 degrees. Prepare a baking sheet by greasing or lining with parchment paper or a silicone mat.
  2. Cream together butter and brown sugar in a stand mixer until light and fluffy.
  3. Add in the powdered sugar, flour, salt and vanilla extract. Beat together until fully combined.
  4. Mix in the chopped pecans by hand with a spatula until evenly distributed.
  5. Form dough into a long, "finger-like" shape and place on cookie sheet.
  6. Bake one sheet at a time for about 12-14 minutes.
  7. Remove from oven and let cool slightly. Place a few cookies at a time in a plastic bag with confectioner's sugar to coat cookies.
  8. Let cookies cool completely on a wire rack.
