Light Shepherd's Pie

Shepherd's pie is a traditional English meal. However, it can be high in calories, since it is usually prepared with leftover beef or lamb. To put a healthy twist on this classic recipe, use lean meat or lean turkey instead. You can prepare this meal ahead of time and place in the freezer, until ready to eat!

  1. 1 1/4 pounds red potatoes
  2. 2 tablespoons extra virgin olive oil
  3. 1 onion, chopped
  4. 1 carrot, chopped
  5. 2 tomatoes, chopped
  6. 1 teaspoon chili powder
  7. 1/2 pound lean ground beef
  8. 1/2 pound lean ground turkey
  9. 1 1/2 cups frozen peas
  10. 1/2 cup skim milk
  11. 1/3 cup low fat cheddar cheese (shredded)
  1. Place potatoes in microwave safe bowl with two tablespoons water.
  2. Heat one tablespoon olive oil in skillet over medium heat.
  3. Add carrot, onion, tomatoes, and chili powder.
  4. Cover, and cook until tender and transfer to two quart baking dish.
  5. Heat the rest of oil in a skillet over medium heat.
  6. Add turkey and beef, cook until brown.
  7. Stir in peas and 1/4 cup water.
  8. Let simmer two minutes.
  9. Spread over vegetables in baking dish.
  10. Preheat broiler.
  11. Add milk to potatoes and mash.
  12. Mix in cheese.
  13. Spread over meat and broil one to two minutes.
