  2. 3 tablespoons Pompeian Arbequina extra virgin olive oil
  3. 3 to 4 boneless chicken breast halves, cubed
  4. salt and pepper, to taste
  5. 1 pint sweet grape tomatoes, halved
  6. 1 package (8-ounces) mushroom slices
  7. ¼ cup loosely packed fresh flat leaf parsley
  8. For the Dressing
  9. 2 tablespoons Pompeian Arbequina extra virgin olive oil
  10. 1 lemon, juiced
  11. ⅛ teaspoon garlic powder
  12. salt and pepper, to taste
  13. grated parmesan cheese, optional
