Grilled Peach Jam
Serves 3
Don't be frightened by the title. Grilled peaches bring out the sweetness of the fruit so using them in a jam will make your preserves that much sweeter.

  1. 3 lb. peaches (8 to 10), peeled, halved, pitted, and cut into chunks
  2. 3 cups sugar
  3. 1 tablespoon fresh lemon juice
  1. Slice the peaches into sections removing the skin and pit.
  2. Lay on a grill pan over medium heat until brown spots appear.
  3. Add the grilled peaches to a food processor and puree.
  4. Pour the puree blend into a sauce pan.
  5. Add the lemon juice and sugar and cook until it comes to a boil.
  6. Seal in clean, hot jar and process in a hot water bath for 20 minutes.
  7. Refrigerate for 24 hours.
