I enjoying sharing recipes showcasing ingredients that are not commonly found in America. When I saw frozen screwpine leaf (aka Pandan leaf) in the Asian market, I thought wouldn't it be cool to grill some chicken skewers wrapped in this fragrant leaf? This recipe is my riff of the French “en papilotte” paper wrapped food parcels.

Ingredients
  1. 2 lb boneless thighs, cut into 2-inch chunks
Marinade
  1. 3 tablespoons SYD Chicken Rub
  2. 2 tablespoon chopped green onions
  3. 1 tablespoon coriander powder
  4. 1 teaspoon chili powder
  5. 2 tablespoons brown sugar
  6. 1 tablespoon oyster sauce
  7. 1 tablespoon soy sauce
  8. ½ teaspoon sesame oil
  9. 4 tablespoon cooking oil
  10. ½ cup coconut milk
Sweet Soy Dipping Sauce
  1. 2 tablespoons soy sauce
  2. 1 tablespoon oyster sauce
  3. 2 tablespoons sugar
  4. 2 tablespoons water
  5. 1 tablespoon chopped cilantro
  6. 1 teaspoons white sesame seeds
  7. Pandan or Banana leaves
