Green Bean Casserole with Shallots & Crushed Crackers

Green Bean Casserole is definitely one of the favorites at Thanksgiving dinner. This recipe is very easy and so tasty! The topping is made of buttery crackers and crispy shallots. Try it at your family's Thanksgiving this year, it's sure to be a hit!

  1. 1 1/2 pounds fresh green beans, trimmed and cut into bite-sized pieces
  2. 1 pound mushrooms, sliced
  3. 1 onion, diced
  4. 1 red pepper, diced
  5. 5 tablespoons butter, divided
  6. 1/2 teaspoon dried oregano
  7. 1/2 teaspoon dried thyme
  8. 1/2 teaspoon dried sage
  9. pinch of cayenne
  10. pinch of nutmeg
  11. salt and pepper, to taste
  12. 6 tablespoons flour
  13. 2 cups milk
  14. 1/2 cup butter crackers, crushed (about 10 crackers)
  15. 1/4 cup vegetable oil
  16. 4 large shallots, thinly sliced
  1. Preheat oven to 350 degrees. Grease a casserole dish; set aside.
  2. Wash and drain green beans, trim off ends and cut into pieces.
  3. In a large skillet, melt 1 tablespoon of butter over medium heat. Add the onion and red pepper, saute until softened, 5 minutes.
  4. Add the mushrooms and cook until soft. Season with salt and pepper. Set aside.
  5. Prepare a large bowl with ice water.
  6. Fill a saucepan with water and bring to a boil. Add the green beans and cook about 6-8 minutes, until tender.
  7. Drain beans, then set in ice bath to stop cooking.
  8. Add beans to onion-mushroom mixture; set aside.
  9. Melt remaining 4 tablespoons of butter in a saucepan over medium heat. Add 4 tablespoons flour, whisking continually about 2 minutes, until golden. Slowly pour in the milk, whisking until thickened, about 3 minutes.
  10. Stir in dried herbs, pinch of cayenne, and pinch of nutmeg.
  11. Remove from heat and let cool slightly, stirring occasionally.
  12. Meanwhile, prepare your crackers. To crush the crackers, add about 10 to a food processor and pulse until crushed into small pieces. Set aside until ready to use.
  13. Pour the creamy mixture over beans and gently toss together.
  14. Add green bean mixture to the prepared casserole dish. Top with crushed crackers.
  15. Cover tightly with foil and bake at 350 for 20 minutes.
  16. Uncover and bake under broiler for 2-3 minutes, until top is golden brown.
  17. Sprinkle with fried shallots.
  18. Serve warm and Enjoy!
  19. To make fried shallots: Place about 2 tablespoons flour in a shallow dish. Toss shallots with flour. Heat vegetable oil or canola oil in a skillet over medium-high heat. Fry shallots until golden brown and crispy. Place paper towels on a plate, transfer shallots to paper towels to drain.
