Flatbread with Spaghetti Squash, Roasted Onions and Blue Cheese

Naan flatbread doesn't just have to be used to dip hummus in. This recipe for a squash flatbread with caramelized onions and blue cheese is delicious, and makes a great party appetizer as the weather warms up. Serve this to a large crowd, and don't forget to make extra!

  1. 1 naan flatbread
  2. 3/4 small spaghetti squash
  3. 1 medium red onion, peeled and quartered
  4. 1/4 cup blue cheese crumbles
  5. 1/3 cup roasted red pepper hummus (or spicy aioli)
  1. In a 350 degree oven, roast the half of a spaghetti squash and the quartered red onion for 45 minutes or until tender.
  2. The onions may finish cooking and caramelizing before the squash; watch the onion around the 30 minute mark.
  3. Remove the squash and onion from the oven.
  4. When cool enough to handle, shred the spaghetti squash and set into a bowl.
  5. Warm the naan in the microwave for 10-20 seconds and allow to cool for about a minute.
  6. Spread the hummus on the warm naan and top with the spaghetti squash.
  7. Top with the roasted onion and crumbled blue cheese.
  8. Serve warm.
