Eggplant Mini Pizzas (Gluten-Free, Low-Carb)

A guilt-free version of pizza made with eggplant. We topped ours with black olives, green bell pepper, and sausage. Leave the sausage off to make it vegetarian or use vegan cheese to make it vegan.

Ingredients
  1. 1 large eggplant, cut into 1-inch slices
  2. 1-2 tablespoons olive oil (for lightly brushing on eggplant)
  3. 1 cup pizza sauce, homemade or store-bought
  4. 3/4 cup mozzarella cheese (or more to taste)
  5. 1/4 cup parmesan cheese
  6. salt and pepper
  7. desired toppings (green pepper, black olives, sausage, etc.)
Instructions
  1. Preheat oven to 450 degrees F.
  2. Evenly arrange eggplant slices on a baking sheet. Brush each side of eggplant with olive oil and sprinkle with salt and pepper.
  3. Top each slice with a spoonful of sauce and spread to coat. Sprinkle on the mozzarella and a little parmesan. Add toppings as desired and adjust seasonings to taste.
  4. Bake 15-20 minutes, until cheese is melted and lightly browned.
  5. Remove from oven and serve hot.
Notes
  1. Makes 2-3 main course servings or 6-8 appetizer servings.
