The pumpkin chocolate chip cookie puts a yummy fall twist on the traditional chocolate chip cookie. Substituting coconut oil in place of typical butter, whole wheat pastry flour instead of all-purpose flour, and dark chocolate chips makes these cookies a not-so-guilty dessert! Enjoy with an ice cold glass of milk!

  1. 2 1/4 cups whole wheat pastry flour
  2. 1/2 teaspoon baking soda
  3. 1/4 teaspoon salt
  4. 1 1/2 teaspoons ground cinnamon
  5. 1/4 teaspoon nutmeg
  6. 1/4 teaspoon ground ginger
  7. 1/4 teaspoon allspice
  8. 1/8 teaspoon cloves
  9. 3/4 cup coconut oil
  10. 1/2 cup brown sugar
  11. 1/2 cup granulated sugar
  12. 1 egg yolk
  13. 1 teaspoon vanilla
  14. 7 tablespoons pumpkin puree
  15. 1 cup dark chocolate chips
  1. Preheat oven to 350 degrees F. Prepare your baking sheets by lining them with parchment paper or silicone mats.
  2. In small mixing bowl whisk together flour, baking soda, salt, cinnamon, nutmeg, ground ginger, allspice, and cloves.
  3. In a stand mixer mix together the coconut oil, sugar, brown sugar, egg yolk, and vanilla. Blend well until smooth, scraping down sides of bowl as needed. Add pumpkin puree and blend until incorporated.
  4. Add flour 1/3 cup at a time, mixing on low speed until soft dough forms. Be sure to not over mix, to avoid over mixing stir the final addition of flour by hand.
  5. Fold in chocolate chips. Then, scoop two tablespoon sized balls and place evenly spaced out on prepared cookie sheets. Press down with palm of your hand to flatten slightly.
  6. Bake 9-10 minutes until edges are lightly golden brown.
  7. Let cool slightly, then transfer to a wire rack to cool completely.
  1. Store at room temperature for up to 5 days in an air tight container. The pumpkin flavor will intensify after a day.
