Creamy Corn Pudding

  1. 4 1/2 tablespoons butter
  2. 1/2 cup flour
  3. 1 tablespoon sugar
  4. 1 teaspoon salt
  5. 1 cup milk
  6. 1 can cream-style corn
  7. 1 can kernel corn
  8. 1 lb. frozen spinach, thawed and drained thoroughly
  9. 3 eggs
  10. 1/2 chopped onion
  1. Melt butter in a saucepan and add flour, stir.
  2. Add in milk, sugar and salt and continue to stir until thickened.
  3. Remove from heat and add cream-style and kernel corn.
  4. Beat egg yolks and add to the corn mixture.
  5. In another bowl, beat egg whites and fold into the corn mixture.
  6. Fold in spinach.
  7. Transfer to a casserole dish and bake for 45 minutes at 350 degrees.
