Ingredients
  1. 1 egg, white separated from yolk
  2. 1/4 tsp salt
  3. 1 cup unsweetened plain almond milk
  4. 2 Tbs plain greek yogurt, 1% or fat-free
  5. 1/2 Tbs olive oil or melted coconut oil
  6. 1 cup whole wheat pastry flour
  7. 1/2 Tbs baking powder
  8. 1 Tbs chopped chives
  9. 2/3 cup shredded sharp cheddar cheese
Instructions
  1. In a mixing bowl (I used a stand mixer), beat egg white until stiff, transfer to another bowl and set aside.
  2. In original mixing bowl, mix together the egg yolk, salt, almond milk, yogurt, oil, flour and baking powder until mostly smooth.
  3. Gently fold in the cheese, chives and the whipped egg white until combined (there will still be some small lumps of egg whites, that's ok).
  4. Cook in a waffle maker according to your waffle maker's instructions. As each waffle maker will hold a different amount of batter, you may need to do a little math here (if you have any questions feel free to contact me!), 1/2 cup of batter is one serving.
